Imported from Italy, it gives the name to the house and is a high protein flour specific for the production of long-fermented pizza dough.
With a balanced mixture of slow-grinding stone flours, our dough is prepared using the indirect method, also called indirect pastries or poolish. We adopted an ancestral process that begins with pre-fermentation at a controlled temperature, followed by a maturation of at least 48 hours of the pasture.
The end result is a thin, crunchy artisan pizza base, scented as the best freshly baked, light and digestible bread.
